Garda Oil DOP: a precious excellence

In the wide world of the certified products of north Italy there is a particular product that stands out for its delicacy and uniqueness. Garda Oil comes from the areas flowed through the sweet waters of Garda Lake, divided by the provinces of Brescia, Verona, Mantova and Trento.

Garda Oil DOP: the territory

The uniqueness of this oil characterised by a delicate and gentle taste is given by the peculiar conformation of the soil where the olive trees grow. A land rich and fertile flowed through the sweet waters of the lake surrounded by the boulder clay hills in the south and pushed in the north by the mountains of Trento.
Hills and mountains safeguard the area so that the olive trees can enjoy the favourable Mediterranean mild climate and the rains spread all over the year.

The man started to transform the land of Garda Bresciano until the Renaissance through levelling and refilling of the soil to create perfect terracing for the hills, built specifically for the cultivation of the olive trees. This unique panorama, terraced and full of olive trees gives the name to the area called “Riviera degli Ulivi”.

Garda Oil DOP: characteristics

Garda Oil DOP is an extra virgin olive oil, pure, polished and a gently delicate taste with a low acidity, below 0,5%. The high content of chlorophyll is determined by its colour that varies from yellow to different shades. The perfume is fruity, but what makes it unique is the taste, fruity and well balanced, characterised by sweet notes and an aftertaste of almond together with the perfume of fresh grass, hay and artichoke, with notes slightly bitter.

The Code of Conduct that regulates the certification is severe and imposes strict rules to the olive oil mills. The most spread cultivation in the areas dedicated to olive trees and allowed by the DOP are the varieties Casaliva, Frantoio and Leccino; followed by Pendolino, Negrel and Gargnano.

The taste is delicate, fruity and make it the perfect oil in cuisine, able to enhance the sweet dishes and desserts. You can use it flavoured with vanilla on a fruit mix, to create creamy ice creams or to knead short crust pastry and the famous sbrisolone. It is, in fact, a savoury and soft oil, that will satisfy your palate.
