The Traditional Method or Méthode Champenoise characterizes the prestigious and well-known french and Italian wines commonly called Champagne or Spumante. Main characters of important dinners and fashion events, the wine produced with the Traditional Method gained during the years the fame and reputation of best wines in the world.

The Traditional Method foresees the bottle re-fermentation through the introduction of sugars and selected yeasts. Each bottle, through a process with different stages, is treated according to an ancient tradition, and for this reason they have a prestigious and a price usually higher than other wines, produced with the fermentation in the pressure tank (Charmat Method), which guarantee a great quality, anyway.
Among the most known areas for the production of high quality Spumante there are the Franciacorta and the Trento DOC zones.
