Hot temperatures are coming, so switch the oven off and get away of the stove, lunches and dinners are light and fresh, with a lot of fruit and vegetable. Salads have always been a great solution, not only healthy but also tasty, giving room to creativity and the right pairings.

Who said that salad is only vegetable? If you are tired of the same lettuce with carrots and tomatoes give a touch of taste using fruit; rich in vitamins and mineral salts it will make unique and peculiar your summer salad. You can enrich it with meat and fish or dried fruit and seeds as well.

Red fruits salad with balsamic vinegar vinaigrette

For the vinaigrette:

Blend a dozen of strawberries with a spoon of oil, a pinch of salt, a teaspoon of Dijon Mustard, a teaspoon of honey and two spoons of Modena balsamic vinegar.

For the salad:

Slice thinly a dozen of strawberries and an apple, half a Tropea red onion, wash a handful of blueberries and cut a handful of nuts. Place it on a placemat of spinach, garnish with the vinaigrette.

Summer fruit and Buffalo mozzarella

It can be strange to pair the sweetness of the pineapple with the buffalo mozzarella, however this fruit salad is extraordinary and refreshing.

To prepare it, you need a diced pineapple, strawberries, arugula, buffalo mozzarella and a handful of cut almonds. Season with a drizzle of lemon oil and lemon zest.

Fruit, vegetable and seeds mix

A rich and coloured mix, it is pretty nourishing thanks to the fresh fruit and the seeds, without quitting the green of the vegetables.

The ingredients to mix together: choose lettuce, valerian, celery cut in sticks and cucumber; mix the fruit, not too ripe: apples, an orange and watermelon. Add dried fruit such as raisin, pine nuts and the seeds: chia and hemp.

A triumph of tastes and consistencies to season with a dressing made with oil, vinegar, lemon juice and grinded basil.

Tropical with avocado, chicken and mango

A coloured and protein-based salad, ideal for lunch. Cut a mango and an avocado, place in a placemat of arugula and fresh spinach. In the meantime dice the chicken and sauté in a pan with a drizzle of oil, a spoon of honey, salt, cayenne pepper and a sprinkle of lime. Place in the middle of the salad and garnish with sesame seeds and grated lime zest.

Fish&Green

If you are a fish lovers, try this recipe with smoked salmon. Slice a couple of courgettes and grill, once cooked baste with a mix of oil, lemon juice and wild fennel or parsley.

Once cooled down, serve with slices of smoked salmon, diced Primosale cheese, some slices of lemon and a dusting of poppy seeds.
