Vegan desserts: some recipes

How it is possible to cook an excellent and tasty dessert, without butter, milk and eggs? The answer is the vegan desserts! It is sufficient to substitute animal milk with vegetable milk as for example rice, soy, almond or oat milk; or oil and margarine instead of butter and avoid eggs in favour of ingredients able to give thickness to the dough.
The result is a wide range of light and low fats delights, perfect not only for the vegans, but also for who is following a low calories diet or suffers of allergies! So, why don’t you try these recipes?

Vegan desserts: lemon cake

Ingredients:
• 200 gr of wholegrain flour
• 100 gr of flour type 0
• 180 gr of brown sugar
• 100 gr of sunflower seeds oil
• 120 gr of lemon juice (about 2 lemon and their zest)
• 180 gr of water
• 1 pocket of yeast
• 1 pocket of vanillin
• Powdered sugar to decorate

Preparation:
• Mix the flours in a bowl, add sugar, yeast, lemon zest and vanillin.
• Pour the filtered juice of two lemons, water, oil and mix to obtain a homogeneous dough without lumps.
• Place the dough in a backing pan 24 cm wide and cook at 180° for 35 minutes.
• Decorate the cake with powdered sugar, or you can stuff it as you like

Vegan desserts: vegan Chiacchere (Mardi Gras fritters)

It’s Carnival time! Why do we have to give up to one of the most famous desserts of this period?

Ingredients:
• 250 gr of flour
• 1 spoon of corn flour
• 3 spoons of olive oil
• 50 gr of still white wine
• Powdered sugar q.s.

Preparation:
• Place all the ingredients in a wide bowl and blend with a wood spoon until you can knead the dough with your hand.
• Knead the dough many times for few minutes, add a spoon of water little by little if it has lumps.
• Allow the dough to rest for 30 minutes and roll it out on a surface, floured in advance.
• Knead and roll the dough out until you see some bubbles.
• Roll out the dough, cut the Chiacchere with a pastry wheel (or a knife) and bake for 180° for 7-8 minutes
• Cool down, sprinkle with powdered sugar and… enjoy!

Vegan desserts: amazing cookies

Raise your hand if your mouth is watering when you hear the word “cookies”!

Ingredients for 20 biscuits:
• 250 gr of flour 00
• 120 gr of brown sugar
• 60 ml of seeds oil
• 75 gr of warm water
• 6 gr of cake yeasts
• Drops of dark chocolate q.s.

Preparazione:
• Melt brown sugar and the yeast in the water; mix little by little the flour blending with a wood spoon. Add also the oil and knead quickly.
• Mix the dark chocolate drops as you like
• Cover with plastic wrap and allow to rest in the fridge for an hour
• Now roll out the dough till it is 3-4 cm thick. It is better to place the dough in the middle of two baking paper sheets to avoid it sticks on the rolling pin
• Cut the biscuits and bake at 180° for 15-20 minutes.
• Cool down for some minutes and taste!
