Prosecco DOCG: a success story in Veneto Region

Prosecco DOCG, we are talking about wine, a real excellence of the territory produced exclusively in the prestigious hills between Conegliano and Valdobbiadene. The DOCG of Conegliano-Valdobbiadene shows the perfect conditions to produce Prosecco, a world renowned Italian wine.

DOCG Prosecco is produced thanks to a method founded by Antonio Carpenè; after the harvest the grapes go through a careful treatment, that can be shared in tre macro-phases: the creation of the basic wine, the mix and the bottling. Each step requires careful timing, during the creation of the basic wines the grapes are treated, the first step is the pressing, then the settling and at the end the vinification; this first stage lasts from 15 to 20 days. The second phase is the “spumantizzazione” when the basic wine is mixed with other existing lots according to given proportions. The creation of the foam occurs in the pressure tank (Martinotti Method); this step lasts about 30 days. Finally the bottling, after 30-40 days Prosecco can be sold.
The grapes, chosen by the districts in the DOCG zone of Conegliano-Valdobbiadene, make Prosecco an extraordinary wine, a perfect pairing with meat and fish, but it give its best during the Happy Hour.
