There are plenty of fast and easy vegetarian recipes, perfect for the daily meals without spending too much time in front of the stove. However, it is more difficult to think about sophisticated vegetarian recipes during special occasions, important dinners or anniversaries. Even because you have to satisfy every palate and also the omnivorous guests don’t have to regret their tasty and traditional second course with meat.

3 vegetarian recipes for the special occasions:

Starter: artichokes soufflés with Parmesan fondue

Wash and cut 4 artichokes, sear in a pan with half an onion and a drizzle of oil; season with salt and pepper and cook for 15 minutes. Once softened, blend with a mixer and add 200ml of béchamel sauce, season with two spoons of pecorino. Add three eggs, one at a time. Fill the iron or silicone moulds and bake for 30 minutes at 200°. Serve with a Parmesan sauce: melt 60 gr of Parmesan in 40 ml of milk and 40 ml of fresh cream.

First course: Chickpeas crepes with eggs and a red chicory cream with Casatella (an Italian fresh and soft cheese) and walnuts

radicchio It is possible to make crepes without eggs and they will be even better. The substitute ingredient is the chickpeas flour to make a spumy batter.
Mix four spoons of chickpeas flour, a glass of water, a spoon of oil, grinded rosemary, a sprinkle of nutmeg, a teaspoon of curcuma, salt and pepper. Let it rest for 10 minutes and cook as the traditional crepes. For the stuffing blend two tuft of Treviso red chicory with 250 gr of Casatella DOP. Season with salt and pepper. Stuff the crepes, fold them in half or roll them and bake with the grill for ten minutes. Sprinkle with grinded walnuts and serve.

 

Second course: vegetarian stuffed meatloaf

Meatloaf is considered as the traditional Holydays dish and you can make it in the vegetarian version as well, with legumes and vegetables.
Parboil 500 gr of Spanish beans and smash them roughly. In the meantime sear a mirepoix of carrot, celery and onion, add rosemary, bay tree leaves and a slice of garlic. Mix the beans and let season for 10 minutes. Cook in a pan three artichokes and cut them in slices. Fold two eggs in the meatloaf and breadcrumb if necessary to dry. Roll the dough out on the baking paper and stuff with artichokes and dices of caciocavallo cheese. Roll the meatloaf, cover with bradcrumbs and cook in the oven at 200° for half an hour until it has browned.
