There is few time left to cook delicious dishes with pumpkin that is available from October to the end of February. If you want to cook something special with pumpkin as the main ingredient, try these tasty pumpkin recipes.

Pumpkin recipes: quinoa and spinach soufflé on a pumpkin and ginger pureed soup

The unique touch of this recipe is the spicy aroma of the ginger (do you know the healing properties of the ginger?), which gets perfectly married with the pumpkin’s sweet taste. This quinoa soufflés are easy and quick to prepare mixing for each portion four spoons of quinoa with half an egg, a spoon of Parmigiano, a spoon of breadcrumbs, grinder and seared spinach. Bake for 10 minutes and they will be ready to be eaten.
Serve with a spicy pumpkin pureed soup: boil the pumpkin and smash it, adding a vegetal consommé in order to obtain a liquid cream, season with salt, pepper and grinded ginger.

Pumpkin recipes: pumpkin savoury pie, Provola and speck

Savoury, easy and successful dish. It is sufficient to stuff a basis of puff pastry with a rich pumpkin cream. Cook 400gr of pumpkin in the oven cut in advance in slices, sprinkled with salt, pepper, oil and abundant rosemary. Once the pumpkin is cooked and warm, blend together with 2 eggs, 50 gr of Parmigiano and 200 gr of Ricotta. Mix the diced speck, seared in advance and stuff the puff pastry. Cover with two thin slices of Provola and grinded rosemary.

A tasty second course that mixes together the sweetness of the chickpeas and pumpkin with the sour note of the fresh goat cheese. To prepare this dish mix together the boiled chickpeas with the diced pumpkin cooked in the oven in advance. Season with the grinded onion, lemon juice, oil, salt, pepper, parsley or coriander, toasted cumin seeds and paprika. Sear for few minutes and set the dish. For the goat cheese mousse blend with a whisk 200 gr of fresh goat cheese together with 2cl of fresh cream, season with chives, a pinch of salt and a drizzle of oil. Place a spoon of mousse on the chickpeas and pumpkin.

A tasty recipe perfect for the aperitif, to substitute the traditional French fries. Slice the pumpkin, potatoes, daikon or parsnip, red turnip and carrot creating a balanced and coloured mix. Dry carefully the slices and fry in hot oil. Drain and season with salt and powder chives. For the aioli sauce: crush 4 slices of garlic with a pinch of salt until you obtain a dough, add the raw yolk and blend adding a drizzle of oil until it become a cream. Then add a hard-boiled yolk and the juice of half an egg, salt and pepper. Serve the chips with the sauce.

Pumpkin for dessert, as well! To amaze your guests prepare these crispy boxes of short crust pastry, lining small pie moulds, filled with a creamy filling of pumpkin. Blend 200gr of boiled pulp of pumpkin with two eggs lemon zest, 3 spoons of sugar, powder cinnamon, a pinch of ginger and nutmeg. Fill the boxes and cover with grinded dark chocolate. Bake for 20 minutes and serve warm.
